February is the perfect month to cheer on your favourite team as they hit the field. If you’re inviting friends over to watch the big game, you need plenty of food to keep your energy levels up so you don’t miss a play. It’s a good thing you’ve got eggs on-hand to get the party started!
Eggs are packed with nutrition – they contain 14 essential nutrients, including protein – to help maintain your energy levels and keep you full. Not only that, eggs are fresh, local and go from the farm to your grocery store in only 4 to 7 days.
This Classic Chili and Eggs recipe is perfect for a party as it can be made ahead in a big batch and since it’s served up in a bread bowl, you can skip the dishes too.
Classic Chili and Eggs
Ingredients:
- 2 lbs extra-lean ground beef
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1/4 cup chili powder
- 2 tsp cumin powder
- 2 bay leaves
- 796 ml canned crushed tomatoes
- 540 ml canned red kidney beans, rinsed and drained
- 1 cup corn
- 1 green pepper, diced
- 1/4 cup chopped, canned chipotles in adobo sauce
- 2 tbsp Worcestershire sauce
- 14 large rectangular or square ciabatta buns
- 1-3/4 cups shredded cheese
- 14 eggs
- 5 green onion, sliced
- salt and pepper to taste
Directions:
- Preheat oven to 375°F (175°C).
- In a large pot, cook ground beef over high heat, breaking into small chunks with back of spoon, for about 15 minutes, until browned and completely cooked. Transfer to a large bowl.
- Return pot to medium-high heat. Add oil, onion, garlic, chili powder, cumin and bay leaves. Cook, stirring frequently, for 2 minutes. Stir in beef, tomatoes, beans, corn, green pepper, chipotles and Worcestershire sauce and bring to a simmer. Cover, reduce heat to low, and simmer for 30 minutes, stirring occasionally.
- Meanwhile, score a rectangle or square into tops of buns. Remove bun tops and hollow out ⅔ of the insides of buns to create bowls for the chili. Arrange bread bowls onto large parchment-lined baking sheets. Sprinkle each with about 2 tbsp (30 ml) cheese.
- Divide hot chili equally between bread bowls (about ¾ cup each). Make a well with a spoon in the middle of the chili. Crack 1 egg into each well.
- Bake for 10-12 minutes or until eggs are cooked to desired doneness
- Sprinkle chili bowls with green onion and season with salt and pepper.
